- 1 mango, peeled & cut into pieces
- 1 tbsp. plus 1 tsp. lime juice
- 2 tbsp. honey
- 1 pt. vanilla ice cream
Blend the mango pieces, lime juice and honey briefly in an electric blender or food processor. Soften the ice cream and quickly stir the mango mixture into it. Pour the ice cream into a plastic container, cover and freeze it until firm. Makes 1 scant quart.
